Grain bill:
- 24 pounds domestic 2 row
- 2 pounds crystal 10L
- 1 pound carapils

Hop bill:
- .90 oz Sterling, 6.5% alpha acids, 60 minutes
- 1 oz Saaz, 4.3% alpha acids, 60 minutes
- 2 oz Hallertauer, 3.9% alpha acids, 15 minutes

Yeast: White Labs WLP400, WLP500 (one per each 5 gallons)

Primary: 2 weeks
Secondary: 1 week

Other: 2 pounds candi sugar

Notes: Mashed in using 30 quarts, strike temperature 155° 60 minute mash, sparged 14 gallons at 170° for 1 hour 10 minutes, collected 17 gallons of runoff, boiled for 60 minutes and ended up with 13 gallons. Have 2 carboys with 5 gallons, another with 3 gallons. OG = 1.064. Still fermenting.

I forget what inspired us to brew this beer, but I was a little hesitant since most blonde ales I have tried are very sweet. While I don't mind that, I also don't want to drink a jolly rancher. This turned out very well. The candi sugar (from beets) did not make it overly sweet, but very drinkable. It was a little fruity and spicy from the hops. We will brew this again sometime in the future.
